Murungaikkai Pori Kuzhambu

This is an easy Kuzhambu that can be made very quickly and it's tasty eaten with white rice. Also goes well with curd rice! Try it out for a change....

Ingredients:
Murungaikkai/Drumsticks – 15 pieces (about 3 inches long)
Onion - 1 big
Tomato - 2 medium
Green chilies - 2 (slit)
Turmeric - 1/4 tsp
Sambar powder - 1 tsp
Mustards - 1/2 tsp
Salt - to taste
Curry leaves - a few
Oil - 1 tsp

Roast & Grind
Thoor dal - 4 tsp
Rice - 1.5 tsp

Method:
Cut the onions and tomatoes. Slit the green chilies. Wash & cut the drumsticks and keep them ready.
In a pan put oil when it becomes hot add the mustards. When the mustards pops add the onions & green chilies and saut well. When the onion is fried well, add the tomatoes and fry for 3-4 minutes. Then add the drumsticks and curry leaves and fry for few more minutes.
Then add the turmeric, sambar powder, salt and after a minute of frying this add about 1 cup of water and let it comes to boil. You can add more water if the kuzhambu looks too thick. Close it with a lid and let the kuzhambu cook for another 15-20 minutes in medium fire until the drumsticks are fully cooked.
While this is boiling, separately dry roast the thoor dal & rice in medium heat and coarse grind it.
When the veggies are fully done, add this powder to the kuzhambu and mix it well. Let it come back to boiling again and leave it for a minute or two and then switch off the stove.
Murungaikkai porikuzhambu is ready. Server it hot with rice. Enjoy!

Next one is a poriyal (dry curry) and Kadhambari, this is the one I was referring to some time back (last week), when we were all discussing on Cabbage dishes!! 😃

Cabbage Poriyal

Ingredients
Cabbage shredded - 2 Cups
Thoor dal - 1/4 cup
Urad dal - 1 tsp
Mustard seeds – 1/2 tsp
Green chilli - 2 (slit)
Sambar powder - 1/2 tsp
Curry leaves - a few
Coconut (grated) - 1/4 Cup
Turmeric powder - A pinch
Oil - 2 tsp
Salt - to taste

Method:
First, in a vessel add the thoor dal along with little water and let it cook till it reaches killu patham (i.e.) 3/4th cooked! Now add the shredded cabbage to this dal when the water is still boiling and let it cook just for 1-2 minutes, not more than that. Switch off the stove.

In a pan, add oil and when it becomes hot add the seasoning ingredients - mustards, urad dal, chilies, curry leaves & tumeric. Fry them for a minute or two and now add the cooked cabbage, dal and little water in which the dal is cooked. (Note: I usually take a little amount of water to cook the dal & the cabbage and will add the entire cooked water to the poriyal, so that the nutrients won't go wasted.😉) Add sambar powder (can be adjusted according to your spicy level), mix well and let it cook over medium heat until the cabbage is tender & and the raw smell of sambar powder fades. Now mix grated coconut with it and serve hot with rasam rice (or even with plain rice it tastes good!😊) Enjoy!

Mixed Daal Tadka is very simple;

It depends how much u want 2 make daal,take 50%moong daal,40%toor daal,10%channa daal.Boil all together.

1 big onion,1 tomato,1 green chilli,mustard & jeera 4 seasoning.

Put oil in a pan & add mustard seeds & jeera,then add onion & wait till it becomes golden brown & add tomato,turmeric powder,dhaniya powder,chilli powder & some salt.After the raw smell goes,mix it with daal & garnish with coriander leaves.

Many of us use either one of the daals,this mixed daal goes well with rotis,stuffed parathas & even with rice.For a change,try this & let me know u'r comments.

Sure supree,let me know about u'r cabbage vadai.

Kothavarangai Usili;

Ingredients:

Toor daal 1/2 cup,channa daal 1/4 cup,dry red chillies.Soak daals for 1/2 hour & grind it coarsely with chillies & salt.use less water.

kothavarangai 1/2 kilo,cut it finely.Mustard seeds,curry leaves for seasoning.

Put kothavarangai in a bowl & add water & allow it 2 boil or u can microwave it till it becomes soft.

Add 3-4 spoons of oil in a pan & add mustard seeds & curry leaves,then add grinded daal mixture.stir it in slow fire till the water moisture leaves & it shud become dry daals,then add boiled kothavarangai & mix well.Daal paste maadhiri illama udhiri padham vandhuduchuna,usili ready.

optional:U can also keep the grinded daal in idly paathiram & cook it.Adhai kothavarangaiyoda udhirthu vittum pannalaam.

Now for a panner recipe.You can use tofu also.

TOFU OR PANEER WITH GREEN PEAS

Ingredients:
400 grms tofu or paneer cut into 1 inch cubes and slightly fried.
1 cup tomato chopped
cup green peas
2 cups onion finely chopped
1 tbs tomato puree
3 green chillies finely chopped
1 tsp garlic paste
1 tsp ginger paste
2 tsp chillie powder
1 tsp coriander powder
tsp tumeric powder
tsp garam masala
1 tsp cumin seeds
2 tbs oil
11/2 cups of water
Little coriander leaves chopped
Salt to taste

Method:
Heat a wok with the oil. Add the cumin seeds and the onions.
Fry till the onions are a little brown.
Add green chillies and tomatoes. Cook till they turn mushy.
Add ginger, garlic, tomato puree, chillie powder, coriander
Powder, tumeric powder and salt and cook till fragrant.
Add water and let it boil. Add in the tofu and the green peas.
Cover and cook for about 10 minutes.
Sprinkle garam masala and the coriander leaves and remove.
Serve with breads or rice.

Sue akka since your M.I.L is here, I will first give the recipe for the rava puttu. I will cook later and post the picture.

RAVA PUTTU

Ingredients:

2 cups rava
1 cup coconut
cup sugar
1 tsp salt

Method:

Roast the rava dry in a pan. Add salt and let it cool.
Mix the coconut scrapings with the sugar.
When the rava is cool, take some water and sprinkle
Over rava occationally and rub so that it becomes
Like crumbs. Every time you sprinkle about 1 tbs of water
Otherwise it would have big lumps.

When it looks like breadcrumbs, stop the process.
Now take the puttu mould and add a little coconut mixture.
Then the rava which looks like breadcrumbs. Top it again
With coconut mixture. You can make two layers.
Close the lid of the puttu jar. Cook for about 5 minutes
After you see the steam from the upper lid holes.
Remove from stove. Unmould the puttu.
Enjoy with sweet bananas.

Note: You can even mix some coconut scrapings to the
Rava which look like breadcrumbs.

Pineapple Salad

1 cup of cucumber
1 cup of fresh pineapple, semi ripe

Make sure both these items are cut in same size. Make sure you remove the pineapple's eye and skin properly if you don't want your tongue to have cracks. 😉

1 onion, quartered and sliced finely.
1 red chilli, deseeded and sliced finely
salt

Combine all ingredients together with the exception of salt. Leave it inside the fridge. 10 mins before serving, take it out from fridge, mix the salt and serve. This dish has the sweetness and sourness, so you don't need any extra. Goes well with briyani/pulao rice.

Note: Do not add salt earlier, because the juice of the fruit and cucumber will flow causing the vegs to look limp. But it will taste nice though.

You can add carrot as an additional veg and squeeze lime juice.

Another fruit you can exchange with pineapple is raw mangoes. Grate all the ingredients.

Kavi, this is a famous dish in all household and now malays have copied this.

Carrot Rice Recipe

Ingredents: 1 cup grated carrot,1 cup boiled rice,2 sliced green chillies,mustard seed,urad daal,channa daal,curry leaves for seasoning & 1/4 spoon jeera powder,1/4 spoon black pepper powdered & 1/4 spoon lemon juice(optional).


Cooking Time: 5-10 mins

In a pan,add few spoons of oil
Add mustard seeds,urad daal,channadaal & curry leaves
Add Grated Carrot,salt,green chillies & boiled rice
Mix well & add jeera powder,pepper & lemon juice & serve

Both chillies & pepper add taste,so use it based on u'r taste.u can serve it with potato chips.this is a gud lunch box dish.i hope u all like it!!

lets start this new year with a healthy salad.
There are many ways to do this salad.
This is how I do.

SPROUTED MOONG SALAD

Ingredients:
1 cup sprouted moong dal
1/2 cup cucumber chopped into cubes (remove seeds)
1 tomato chopped into cubes (remove seeds )
1 green chillie chopped
1 onion chopped
4 strands of coriander leaves chopped
1/4 tsp of pepper powder
lime juice to taste
salt to taste

Method:
Combine all the ingredients in a bowl. Toss well.
Chill and serve for lunch.

A gentleman from our IF by the name of Mr. Baskaran sent me a pm requesting for rava uppuma.
I am posting the recipe and a picture of uthir-uthir
uppuma.

Rava Uppuma

Ingredients:

1 cup rava roasted nicely with 1 tbs of ghee
1 inch ginger chopped
1 onion chopped
3 green chillies chopped
Salt to taste
2 cups of water

To temper:
1 tsp mustard seeds
1 tsp urad dal
1 tsp channa dal
1 sprig curry leaves
2 tbs ghee or oil
Lemon juice to taste     optional

Method:
Heat a wok with ghee or oil. Add in the mustard seeds
Urad dal, channa dal, and curry leaves.
Saut nicely. Now add in the onions , ginger and green chillies.
Stir nicely , when the onions are a little brown add in 2 cups
Of water and salt. Let the mixture boil.
When it boils, slow the fire and add the rava little by little
Stirring all the time. See that no lumps are formed.
Stir nicely and see that the rava is cooked.
Remove from stove, sprinkle little lime juice if you like.
Serve with kara chutney

NOTE:    If you want uthir- uthir uppuma, use only 1 cup of water for1 cup of rava

As soon as you mix everything, keep the flame very very small.
Cover the wok and let it cook in its steam for a while. Then remove
The cover and break up the lumps.

Another way is to add chopped carrot, capsicum, green peas and any
Vege of your choice   to make vegetable uppuma. You can garnish with coriander leaves.

There is another version called masala uppuma.

I normally serve the soft uppuma with sambar or kara chutney. The uthir-uthir uppuma  with sugar, banana or with sambal.
