Prawns (Shrimp) in Green onion

This is a quick and yummy recipe. Most importantly, the taste is very kids friendly!

Ingredients:
Prawns – 15 to 18
Onion – 1 Medium (chopped)
Tomato paste – 2 tbsp
Green onion – 1 small bunch (chopped fine)
Ginger & Garlic paste – 1 tsp
Pepper powder – 1 tsp
Turmeric – tsp
Olive Oil – 3 tsp
Salt – to taste
Shredded Carrots – 2 tbsp
Shredded Cabbage – 2 tbsp
Veg. Oil – 1 tsp
Coriander leaves – for garnishing

Method:
First wash, clean the prawns and add half of Ginger Garlic paste, Turmeric, Pepper powder, Salt and 1 tsp of veg. oil. Mix and leave it for atleast 30 minutes.
Then add olive oil to an empty pan and fry the rest of the Ginger garlic paste, chopped Onion nicely.
Then add the prawns and fry for some time. When the prawns are done, Add Green onion, Carrots, Cabbage and fry for few more minutes and add tomato paste too.
Again quick fry for few more minutes and garnish it with cut coriander leaves.

Note: This dish tastes kind of sweet because of the Green onions... very suitable for the kid's taste buds!. If you like the curry to be more spicy, you can add 1 tsp chili powder instead of (OR) in addition to pepper powder. Enjoy! 😊

Prawn Salad

10 large prawns (deviened)
1/2 promogenate fruit - remove piths
1/2 large onion, sliced
2-3 bird's eye chilli. sliced thinly
1 pc lemon grass - sliced finely
10 mint leaves
1 tbs lime juice
1 tbs fish sauce
1 tbs sugar
1 red chillie, sliced
chilli pdr to your taste

Shell the prawns and deviened. Marinate with chilli pdr and grill / bbq for few mins until cooked. Mix all the above ingredients well. Add prawns and mix well again.

Serve.

Well, this is the first time Netra is posting a recipe here. This is my fav and hope you guys like it too. Am not sure if its been posted here already... here you go..

Pakora Cheese Chicken

Chicken-250gms., Besan-100 gms., Ginger paste-1tsp, Garlic paste-1/2 tsp, Green Chilli paste-1/2 tsp, Grated cheese cubes-4, Egg-1 beaten, Refined oil-1 tsp, Oil to fry


Marinate 250 gms. of boneless shredded chicken with one tsp of ginger paste, 1/2 tsp of garlic and green chilli paste, four cheese cubes grated (any kind of cheese will do), one beaten egg and one tsp of refined oil. Add salt according to you taste. Divide the marinated chicken into small portions and deep fry till golden brown. You can eat it plain or with sauce.

Cucumber and Prawns

Ingredients
(1) 250g prawns, shelled and deveined
(2) 1/2 cucumber, cut into strips
(3) 1 clove garlic, chopped
(4) 1/4 cup chicken stock
(5) 2 tsp soya sauce
(6) 1 tsp sesame oil
(7) Pepper & Salt

Method
(a) Heat 2 tbspoon of oil in a wok. Fry the garlic till fragrant.
(b) Add cucumber and stir fry for about 3-4 minutes.
(c) Add chicken stock and seasoning.
(d) Place prawns over the cucumber and continue stir frying until prawns are thoroughly pink or cooked. Dish out and serve hot with rice.

EGG ACHAR
     
Ingredients:
5 hard boiled eggs
1 cucumber seeded and cut into strips
1 carrot cut into strips
1 big onion cut into rounds
2 long beans cut into 1 inches in length
2 red and green chillies slit
1 tbs chillie paste
1 tsp sesame seeds
3 tbs of vinegar
3 tbs of sugar
Salt to taste
Oil

To grind:
5 medium sized onions
5 pips garlic
1.5 cm ginger

Method:
Remove the shell from the hard boiled eggs.
Now fry the whole eggs in oil and remove. Keep aside.
Heat about 2tbs of oil, saut the ground ingredients
Till there is a good aroma.
Now add in the chillie paste and fry till oil rises from the spices.
Add in the cucumber, carrot, slit chillies and long beans, stir for a minute.
Add in the vinegar, sugar and salt. Add little water if needed.
Add in the fried eggs, stir for a minute add in the cut onions and
Sesame seeds. Mix well and remove.

Note: This dish is good for functions.

Thai Chicken Fried Rice
 
    3 cups cooked rice, at least 1 day old and refrigerated 2 garlic cloves, finely chopped 1 small red or green chilli, finely chopped 1 large chicken breast, cut into small pieces chicken stock 2 tablespoons fish sauce 1 egg, beaten 1/2 cup peas, frozen or fresh Oil 3 spring onions, roughly chopped
  • Coriander leaves, chopped

Mix 1 tablespoon oil in with the rice, using your fingers to separate the grains.  Put 2 tablespoons oil in a pan and when it's hot add the garlic and chilli. Stir fry for about 1 minute. Add the chicken and stir fry until cooked (about 3 - 5 minutes depending on size). Add a little stock if it begins to stick. Set aside.

Add the egg to the pan and stir fry until lightly cooked. Return the chicken to the pan, add the rice and fish sauce, and stir well. Heat gently for 1 minute then add the peas and continue stir-frying for 2 minutes or until the peas are just cooked. Add salt to taste.

Serve immediately with the spring onions. If the dish is too salty, add a little lime juice

HONEY BAKED CHICKEN WINGS
 
Ingredients
a) 12 large chicken wings
 
Seasongs
a) 4 Tbsps honey
b) 4 Tbsp light soya sauce
c)  1 tsp salt
d)  1 tsp. white papper powder
 
Method
1. Combine seasoning ingredients with chicken wings and prick chicken wings with a fork and leave it marinated for abt 3 hrs.
2. Preheat oven to 200 C. Line a tray with foil and lightly grease it with oil.
3. Bake for 15 mins on each side and baste it with the remaining seasoning using a brush.Cook chicken wings for another 5 mins or until its lightly brown in colour.
4. Serve baked chicken wings in a bed of lettuce and tomatoes. Garnish it with fried crispy onion rings.

PRAWN PUMPKIN PATTIES
 
Ingredients
(1) 400g coarsely grated pumpkin (without skin)
(2) 200g prawns, shelled, deveined and chopped coarsely.
(3) 2 medium sized onions, sliced
(4) 1 egg, lightly beaten
(4) 80g self raising flour or plain flour with 1/2 tsp baking powder 
(5) 1 tsp salt
(6) Oil for frying
 
Method
(1) Combine pumpkin, prawns and onion in a mixing bowl.
(2) Add beaten egg, salt and flour. Mix until well combined.
(3) Heat enough to shallow fry patties in a frying pan. Spoon pumpkin mixture into hot oil and fry till patties are slightly golden brown on both sides - abt 2 mins on each side.
(4) Remove and drain patties on kitchen towels. Serve with tomato or chillie sauce. Its a great tea time snack.

CHINESE STYLE FRIED RICE
 
Ingredients
(1). 2cups Thai fragrant rice, washed and strined
(2). 1 tsp sugar
(3). 5 tbsp. oil
(4). 3 large eggs -lightly beaten
(5). 4 cloves garlic- chopped finely
(6 ). 1 carrot, diced and parboiled.
(7).  1/4 cup frozen peas
(8)   1/2 cup diced and fried tofu cubes,
(9).   1 tbsp oyster sauce
(10). Salt to taste
(11). 3 stalks spring onions, chopped
(12)  1 red chillie, chopped finely
 
Combine to Marinate
(1) 120g chicked, diced
(2)  1/2 tsp salt
(3)  1/2 tsp pepper
(4)  1/2 tsp sesame oil
 
Method
(1) Cook rice in a rice cooker, Once rice is cooked, stir in sugar and flluff up rice with chopsticks. Leave to cool and let stand for at least 6 hrs.
(2) Heat 3 tbsps oil in a wok over medium high fire. When smoking hot, add eggs and stir it continuously until the eggs are broken up and cooked. Remove and set aside.
(3) Heat remaining oil in the same wok over medium fire. Stir-fry garlic until fragrant. Add marinated chicken and stir-fry till chicken gets cooked, abt 3 mins.
(4) Toss in cooled rice and stir-fry for 1 min. Add carrots, green peas, fried tofu cubes and cooked eggs.
(5) Stir-fry rice for 3 mins and season with oyster sauce, soya sauce and salt to taste.
(6) Add spring onions,chopped red chillie and mix well. Turn off the flame.

PRAWNS IN HOT SAUCE
 
Ingredients
2 onions, roughly chopped
2 tbsp tomato puree
1 tsp ground coriander
1/4 tsp turmeric
1 1/2  tsp chillie powder
3 fresh green chillies
3 tbsp choped fresh coriander
2 tbsp lemon juice
Salt to taste
3 tbsp corn oil
16 peeled cooked king prawns
 
Method
1. Put the onions, tomato puree, ground coriander, turmeric, chilli powder, 2 of the green chillies, 2 tbsp of the chopped coriander, the lemon juice and salt into a food processor, Process for abt 1 minute. If the mixture seems too thick, add a little water to loosen it. Chop the remaining chilli and reserve for garnishing the dish.
 
2. Heat oil in a preheated wok. Lower the heat, add the spice mixture and fry for 3-5 minutes or until the sauce has thickened slightly.
 
3. Add the prawns and stir-fry over a medium heat until they are heated through but not overcooked.
 
4. Transfer to a serving dish and garnish with the remaining chilli and chopped fresh coriander. Serve immediately.
