Aloo Cholay |
Ingredients
250 gms kabuli channa, boiled
Chaat masala
12 - 15 red chillies
2 potatoes, boiled and diced
Salt to taste
2 tbsp coriander seeds
Green chillies chopped
Coriander leaves chopped
1 cup tamarind juice
1 tbsp cummin seeds

Roast and grind the red chillies, coriander seeds and cummin seeds. Mix them with chaat masala, salt, tamarind juice, chanas and potatoes. Put into a serving bowl and garnish it with coriander leaves, green chillies and onions. Finally serve. |
Cheese Balls |
Ingredients
Flour 1 oz
Mustard 1/2 tsp
Egg 1
Green masala chopped
Potato 1 pao boiled and mashed
Chilly powder 1 tsp

Cheese grated 1/2 cup
Baking Powder 1 tsp

Mix the grated cheese and with the boiled and mashed potatoes. Also mix in chopped coriander and green chillies, flour, salt, pepper, mustard, baking powder and egg. Now make balls and roll them in flour and fry. Serve hot. | |
Alloo Aur Keema Kay Rolls |
Ingredients
1/2 kilogram potatoes
2 teaspoon salt
1/2 teaspoon black pepper
250 grams lean minced beef
1 teaspoon garlic paste
1 teaspoon ginger paste
1/2 teaspoon chilli powder
1/2 cup water
1/2 teaspoon black pepper, powder
1 tablespoon vinegar
1 large egg, beaten
- bread crumbs for coating
- - oil for deep frying

1. In a large saucepan cover potatoes with cold water by 2 inches and simmer until tender, 35 to 40 minutes.
2. Drain potatoes in a colander and cool slightly. While potatoes are still warm, peel and mash with a potato masher or fork and stir in 1 teaspoon salt and black pepper. Chill mashed potatoes until cold.
3. Meanwhile prepare the stuffing: Place mince in a skillet. Add ginger, garlic, chili powder, black pepper, water and remaining salt to it.
4. Cook over medium heat for 15-20 minutes until mince is tender and water has been completely absorbed. This is very important otherwise rolls will split on frying. Remove from heat; add vinegar and keep aside to cool.
5. Flour your palm and place about 2 tablespoons of the mashed potato and pat it into a round shape. Place a little of the stuffing in the center and fold the potato paste over it, covering the stuffing completely and roll it into an oval shape.
6. Dip rolls first in egg and then roll in bread crumbs to cover completely. Repeat with remaining rolls and place them in a single layer on a baking tray.
7. Heat oil in a karahi or wok over medium heat and fry rolls in batches for 3-5 minutes or until golden. Remove from oil and put them on absorbent kitchen paper to absorb excess oil. |
Spicy Chapati Rolls |

For the filling: 1 onion, sliced 1 large potato, peeled and grated 4 nos. baby corn, sliced 1/2 cup peppers, diced (red, yellow or green) 2 tablespoons roasted peanuts, crushed 1/2 teaspoon chilli powder 1/2 teaspoon garam masala 1 seasoning cube (vegetarian), optional 1 tablespoon lemon juice 1 tablespoon oil salt to taste
For the filling: 1. Heat the oil in a non-stick pan, add the onion and potato and saute for 4 to 5 minutes.
2. Add all the other ingredients except the lemon juice and cook for further 2 minutes.
3. Remove from the fire. Add the lemon juice, mix well and keep aside.
How to proceed: 1. Divide the filling into 4 equal portions.
2. Warm the chapatis lightly.
3. Place one portion of the filling at one side of the chapati. Roll up tightly.
4. Repeat for the remaining chapatis and filling.
5. Serve warm with ketchup or chutney. |
Chicken Balls |
Ingredients
3 boiled potatoes(grated)
2 hard boiled eggs(grated)
1/2 cup grated cheddar cheese
1 cup chicken boiled and cut into small pieces
salt accoring to taste
black pepper according to taste
oil for frying
bread crumbs 1 cup
- eggs to dip(beated)

1. Mix all the ingredients togather( except oil,eggs and bread crumbs) into a smooth batter.
2. Make small balls. dip in egg, roll on bread crumbs and fry till golden brown.
3. Serve hot with ketchup. |
